Chocolate Top Ramen Ice Cream Sandwiches

What have I done. I did it. I ate chocolate-covered Top Ramen.

But guess what? It was delicious. Actually, literally, insanely delicious. It tasted like a chocolate-covered pretzel — just a tad bit crunchier and it stuck in between my teeth a bit more. I didn’t get a huge tummy ache after, either.

My foodie cousin Dan is brilliantly nuts and came up with this dessert recipe for college students who really do eat Top Ramen for most meals. (he’s a crossfitter and paleo dieter, btdubs, and lost 30 lbs in one month — !! ) There’s nothing wrong with Top Ramen, and it’s totally acceptable to eat when you’re on a crappy college budget. I just hope you can add variety to your diet with some fresh fruits and vegetables, too. I know I said I’d never make a Top Ramen recipe for this blog, but here we are. Never say never.

This chocolate Top Ramen ice cream sandwich was inspired by the frozen ice cream sandwiches you get at grocery stores or from the ice cream man. My cousin’s take on ice cream sandwiches is a killer combo, and the ramen is a delightful twist on a classic. There’s even sea salt on the chocolate to be fancy schmancy. You gotta try this out — whether you want to do it for kicks or to get rid of your surplus of Top Ramen.

Here’s what you need:

1 package of Top Ramen (any flavor — thou must discard the flavor packet!), 1 cup chocolate chips, sea or kosher salt (or other coarse salt), and vanilla ice cream.

Grab a butter knife and start chiseling the Top Ramen noodle square. Split it in half like so. Work slowly so you don’t damage the square and break it into tons of noodle shards.

Once the two halves are loosened, you can break it apart like this.

Use the butter knife again and cut each flat square in half. That’ll be the perfect size for ice cream sandwiches!

Okay, you may damage it a little, but that’s okay. Set the broken shards aside for a different project — chocolate covered Top Ramen bites. I’ll post that soon. As for the perfect ramen halves, grab two and let’s go from there.

In a microwave-safe bowl, add in 1 cup of semi-sweet chocolate chips.

Microwave for 30 seconds, and then remove that from the microwave and stir. This is the proper way of microwaving chocolate so that it doesn’t burn on you.

Microwave again for 30 seconds and stir. It should be perfectly smooth and melty….

Like this! Now, don’t add nonsense to this chocolate. We added vanilla extract and it seized up, and you’ll have to add vegetable oil to smooth out the chocolate again. Just use plain melted chocolate chips as your dip.

Using two spoons, forks, chopsticks, or what have you, dunk the ramen halves in one at a time. Shake excess chocolate off, puh-lease!

Line a small baking sheet, dish, or w/e with parchment paper. Transfer the chocolate-coated ramen on the parchment paper.

Now grab that sea salt. Don’t use regular iodized table salt. That’s just not aesthetically pleasing. If you don’t have sea salt, kosher salt or something coarse like that works. Sprinkle just a little bit on top.

Now do the other one. And pop them in the freezer for maybe 15 minutes until the chocolate hardens.

I’d say that looks pretty frozen. Now place one on a plate….

And top it off with a nice healthy scoop of vanilla ice cream.

And top the ice cream with the other ramen half. Think of it as a pretzel. I swear, it really does taste like a chocolate-covered pretzel. So yummy, so creative. You gotta try it. Thanks, Dan!!

Chocolate Top Ramen Ice Cream Sandwiches

Total time: 20 minutes

Cook: 1 min
Yield: 1-2 servings
Level: Easy

Ingredients:
1 package Top Ramen noodles (any flavor, discard the flavoring packet)
1 cup semi-sweet chocolate chips
1/8  teaspoon sea salt or kosher salt (or other coarse salt)
1 scoop vanilla ice cream

Directions:
Place the square of ramen noodles flat on a cutting board. Using a butter knife, split the square in half to create two flat squares. Cutting carefully and slowly with the butter knife to avoid breaking the noodles, divide the squares in half to create two rectangles. You should end up with 4 rectangles of ramen noodles. If noodles are too broken, reserve any large broken pieces of ramen and set aside for chocolate-covered ramen bites.

In a microwave-safe bowl, add 1 cup of chocolate chips. Microwave on high for 30 seconds, then stir the chocolate with a spoon. Microwave again for 30 seconds and stir until fully melted. Microwave for an additional 10 to 15 seconds, if necessary, to melt the chocolate completely.

Using two forks or chopsticks, coat the ramen rectangles in melted chocolate until covered. Shake off any excess chocolate and place the chocolate-covered ramen on a parchment paper-lined baking sheet. Sprinkle sea salt lightly, but evenly, over the top of chocolate-covered ramen. Repeat steps to create at least 2 chocolate-covered ramen rectangles. Place in freezer for at least 15 minutes, or until chocolate is hardened.

To create ice cream sandwiches, place one chocolate ramen half on a plate. Place a scoop of vanilla ice cream over the ramen half. Place other ramen half on top to create a sandwich. Serve immediately, or place in freezer until serving time.
