Green Beans with Caramelized Onions
The perfect accompaniment to any dinner is a good side of vegetables. Green beans aren’t just a Thanksgiving classic. Green beans are universally loved and can go with any meal. I’ve opted to use frozen green beans because sometimes choosing and preparing fresh green beans can be a little tedious. Frozen green beans are already cut for you — all you have to do is quickly boil them in water before using, or you can even cook them in the microwave. Super easy! Caramelized onions add a beautiful sweetness to otherwise boring boiled green beans. You can top these green beans with a quick vinaigrette (click here for my favorite vinaigrette recipe) or even chopped almonds and walnuts.

First off:
Slice the onions. We want slices, not diced onion. So just cut the onion to make strips like this.
In a large pot over high heat, add a few tablespoons of olive oil and toss in the onions. Add a wee bit of salt and cook for about 10 minutes.
Let’s prep the beans. Straight from the freezer are these beans. We wanna remove the chill off them and cook them a little. The microwave is your best friend here. Add a few tablespoons of water over the beans and microwave for about 5-7 minutes.
That should be enough time to cook the beans gently and remove the frost. Do the beans in batches so you can have all of them prepped as the onions cook.
All that excess water is no bueno. Drain the beans.
The onions look yummy after about 10 minutes. You can caramelize them even more than I have done here.
Toss in the beans, and cook with the onions for about 5 minutes until everything comes together and is completely warmed through.
Adjust for seasoning with salt and pepper. Enjoy!

Ingredients:
3 tablespoons olive oil
1 white onion, sliced
Salt
3 pounds frozen green beans
Water
Freshly ground black pepper
Directions:
In a large pan over high heat, add oil, onion, and 1/2 teaspoon salt. Cook onions until golden brown, softened, and caramelized, about 10 minutes.
In a large microwave-safe bowl, add frozen green beans and a few tablespoons water and microwave for about 5-7 minutes to remove frost off green beans and lightly cook them. Continue cooking green beans in batches until all green beans are cooked. Drain green beans. Green beans can also be cooked in boiling water for about 2 minutes.
Add cooked drained green beans to caramelized onions and cook for about 5 minutes. Adjust for seasoning with additional salt and pepper. Serve immediately.
