Few things are simpler than a grilled cheese sandwich. How can something so easy and fast taste so darn delicious? I blame the butter. Just a schmear of butter goes a long way in making the perfect grilled cheese sandwich.
Here are a few quick tips to perfecting the art of grilled cheese sandwiches: use an excellent pan, and don’t allow the pan to get too sizzlin’ hot. To specify, I mean use a heavy bottom cast iron pan, if you got one. Stainless steel or nonstick pans will work fine, too. Just note that the real secret is in the temperature of the pan — medium heat is just perfect for simultaneously creating a golden brown exterior and making the cheese so ooey gooey and melty.
Here’s what you need:
Plain ol’ white bread. American cheese (is da best). Butter. Don’t forget to get a skillet preheating over medium-high heat on the stove.
Unwrap the cheese onto one slice of bread. Nice.
I like pepper. Do you like pepper? Pepper is good. bueno. excelente. Sprinkle some on top of the cheese.
Maniacally slap the other piece of bread on top of the cheese and stare at it for a few seconds. This beauty needs some buttah.
1 tablespoon is enough for one sandwich. Mash the butter around to soften it, if you must.
Apply liberally and evenly with 1/2 tablespoon of butter.
Place the buttered side down onto the pan and enjoy the gentle sizzle sound. I kind of want to create a Facebook group to unite those who enjoy “The Sound Butter Makes When it Hits a Hot Pan.”
Finish buttering up the half-naked sandwich with more buttah.
Cook the first side for 2 minutes. No more, no less… unless your stove is really weak or too hot. Just check for doneness, and flip the sandwich when the first side looks like this. NOM. Cook the other side til it looks like that.

Perfect Grilled Cheese Sandwich

Prep: 30 seconds

Yield: 1 sandwich
2 slices white bread
2 slices cheese (recommended: American cheese)
Freshly ground black pepper
1 tablespoon butter, softened
Place a heavy-bottom skillet (such as a cast iron pan) over medium-high heat.
To prepare sandwich: Place slices of cheese on one piece of bread. Sprinkle some ground pepper over cheese, if desired. Place the other slice of bread over cheese. Using a butter knife, evenly spread 1/2 tablespoon of butter over the top face of the sandwich. Place the buttered face of sandwich down into hot skillet. Finish buttering the other face of sandwich with remaining 1/2 tablespoon of butter. Cook first face of sandwich for 2 minutes, until lightly golden brown and crisp. Cook other side of sandwich until golden brown, about 2 minutes. Serve immediately.
