I’m listening to the Backstreet Boys’ “Black & Blue” album right now, feeling so convinced as ever that the world is ending. If you haven’t heard of all the controversy surrounding #TheDress, then I am warning you now: stay away from it all. You might question your friends, your family, and your sanity and argue to no end. You will go back and forth and defiantly declare that the dress is black and blue, or white and gold. And then your eyes and mind will play tricks on you. The dress might change colors for just a second, and the world around you is never the same again. I bet $50 that the dress is a gif somebody created to screw with every Internet user in the world. And I bet that somebody is Jimmy Kimmel! Just wait for it!
In the end, it doesn’t matter who’s right. Mix up this delicious coconut pina colada, served with golden pineapple slices, blackberries, and blueberries. The drink celebrates both teams and all the colors. For the record, the dress is TOTALLY black and blue. Now make this drink and go on your merry way.
Here’s what you need:
Ice, frozen pineapple chunks, canned coconut cream, pineapple juice, rum (white or dark works!), blueberries, blackberries, and fresh pineapple slices.
Throw the ice, frozen pineapple, coconut cream, pineapple juice, and rum in a blender.
If you don’t have pineapple juice, any tropical fruit juice works. If your blender gets jammed from too much ice, keep some extra juice on hand just in case to keep the machine running.
I prefer white rum. Feel free to use dark golden rum (see what I did there?).
Pina Colada Recipe
Total time: 5 minutes
Prep: 5 min
Cook: 0 min
Yield: 2 servings
1 1/2 cups ice
1/2 cup frozen pineapple chunks
1/2 cup pineapple juice, or other tropical fruit juice
1/3 cup canned coconut cream
1/4 cup rum, white or dark (for stronger drinks, add up to 1/3 cup)
Optional: a few teaspoons sugar
Add ice, frozen pineapple, juice, coconut cream, and rum in blender and puree until smooth. If necessary, add additional fruit juice to blend if smoothie is too icy. Add sugar to sweeten, if desired. Pour into chilled serving glasses. Place pineapple slice on rim of serving glass. On a wooden skewer, place blackberries and blueberries in an alternate pattern and serve with pina colada. Serve immediately.
