Quick Baked Honey Dijon Chicken

A good friend of mine gave me this recipe for excellent honey Dijon chicken. There are only 3 ingredients — you read that right. Three! Honey, Dijon mustard, and chicken. Did the name of the dish not give away the ingredients? ;0 You can add salt and pepper, if you please. This is one of the quickest and easiest recipes for ordinary chicken breasts, and you can fill your home with  unbelievable aromas in no time. You have to try this dish. After you make it, you’ll be kicking yourself and asking why you didn’t make it any sooner.

The ratio of honey to Dijon mustard is 1:1, and the sauce lasts well in the fridge, so make as much as you like. Don’t forget to serve some extra sauce on top of the baked chicken. This dish is also excellent with mashed sweet potatoes, might I add.

Here’s what you need:

Chicken (skinless boneless breasts), honey, and Dijon mustard. Yup, that’s it. Oh, and preheat that oven to 375 degrees F!

In a small bowl, combine the honey and mustard.

Looks good enough to dip a soft pretzel in.

We’re makin’ two breasts. Line a small baking sheet with foil and lay the breasts on top, smooth side facing up.

Schlather the chicken breasts with the sauce. After you use your spoon to touch the raw chicken, please do not double-dip that same spoon back in the bowl of honey mustard! Pour the sauce on and do not contaminate the honey mustard with raw chicken, capiche?

Sprinkle on some salt and pepper, if you please. There’s plenty of flavor goin’ on already, but who doesn’t like a little peppery zing?

Bake for 20 minutes, or until chicken is lightly golden brown on top.

Go ahead and stab it with a small knife to check for doneness. The juices inside should run clear when you insert a knife in the thickest part of the chicken breasts.

Please let the chicken rest for about 5 minutes before serving so it doesn’t burn the roof of your mouth. Trust Me. Oh, don’t forget to schlather on some more of that extra honey mustard sauce!

Top with some chopped parsley. This is totally optional. I just like to add some personality to my food. Serve on top of rice, buttered noodles, mashed potatoes, mashed sweet potatoes, quinoa salad, couscous, white bean salad….or, anything. Enjoy!

Quick Baked Honey Dijon Chicken

Total time: 22 minutes
Prep time: 2 minutes
Cook time: 20 minutes
Yield: 2 servings
Level: Easy

Ingredients:
2 boneless skinless chicken breasts
1/4 cup honey
1/4 cup Dijon mustard (recommended: Trader Joe’s or Grey Poupon)
1/2 teaspoon freshly ground black pepper

Directions:
Adjust the rack of your oven to the lower middle level. Pre-heat oven to 375 degrees F.

In a small bowl, whisk together honey and Dijon mustard until mixed. On a small baking sheet lined with aluminum foil, lay two chicken breasts side by side, making sure smooth side is facing up. Start by pouring 3-4 tablespoons of sauce over chicken breasts, and spread sauce around evenly over chicken with a spoon. Do not use the same spoon to stir the sauce and spread over the raw chicken breasts. Sprinkle top of chicken breasts with black pepper. Remaining sauce can be stored in refrigerator.

Bake chicken for 20 minutes, or until chicken is lightly golden brown on top and juices inside run clear when you insert a small knife in the thickest part of the chicken breasts. Chicken breasts can take between 25-30 minutes, depending on your oven. Remove baking sheet from oven, and allow chicken breasts to rest for at least 5 minutes before serving. Spread reserved honey Dijon sauce over cooked chicken, and serve immediately.
