This post is just a fun update on a few things.

So I haven’t posted for a while (one week without an update is a long time for me!) because my computers decided to die on me. Please note that I said computerS, meaning both of my computers crashed on the same weekend.  I apologize for the delay, but many more recipes are on the way! Mother’s Day is tomorrow, and I’m going to try my best to post the recipes I make for brunch tomorrow. If I don’t, it’s because I’d rather be chilling with my madre rather than taking photos of food, if you know what I mean.

Anyway, more recipes are going to come hot and fresh to your inbox soon. In the meantime, please enjoy these amazing photos of my recipes that my friends have shared with me. I’ve anagram-ized my friends’ names for kicks and giggles.

Nothing — absolutely nothing — makes me happier than when people make my recipes! Okay, maybe going on Space Mountain two times in a row makes me just as happy, but this is a lot more personal. Happy Mother’s Day tomorrow!

“Greenish Rice Lei” made Macaroni and Cheese(click for recipe!) with grilled chicken, steamed cauliflower, onion, red bell pepper, and some milk! It turns out milk is a great alternative if you forget to reserve some hot pasta water. This is brilliant, I have to try this.

“Greenish Rice Lei” and “Canny Aging” made my portobello mushroom burgers, too! The left is homemade, handmade pesto with Trader Joe’s Mediterranean feta cheese. I’m dying. This all looks too good. And in the middle is fruit that they picked from outside to complement the delicious dinner.

Last week, “A Long Silo Sun,” “Snorkeler Hos Limit,” and I made cheesy pesto bread with SMOKED mozzarella. I think I can only make this dish with smoked mozzarella now. It’s insanely and infinitely better than regular mozzarella.

We also made lemon cranberry quinoa salad. “Snorkeler Hos Limit” made her signature baked salmon with dill and tomatoes. It looked a lot like the cheesy pesto bread, and I burned myself when I grabbed the salmon fillet, thinking it was the bread. Whoops.

Oh, we also made polenta cakes. Basically, I wanted to die from a food coma after last week. So the truth comes out… my binge eating and binge cooking made me not want to post any recipes this past week. But really, my computers really did crash.

“Greenish Rice Lei” also remade the pesto portobello mushroom burgers this week — instead of making pesto mayo, she used Greek yogurt and pesto. INGENIOUS!

“Zip Slunk Ray Ax” made my orange slice jello shots! These would be the perfect snack for the very hot weekend indeed.
